Paximadakia with parsley dip

1 big bunch of parsley (only the leaves)

100 grams stale bread

1 small onion

1 clove of garlic

juice of 1 lemon

3 spoonfuls olive oil

250 grams strained yogurt

salt, pepper

 

 

 

Soak bread in water and squeeze to get rid of excess water. Place in a blender with parsley, onion, garlic, salt and pepper and stir for 1 or 2 minutes. Add yogurt, olive oil and lemon juice and stir for a little longer.
