Greek salad with paximadi

TEAM OF CRETAN PAXIMADI PRODUCERS

2 barley or wheat regular size rusks

or 6-7 small-size rusks

2 tomatoes, 2 spoonfuls parsley

1 onion, 1 green pepper

1 cucumber, 6-7 olives

1 spoonful capers

100 gr dako cheese

or feta or xinomyzithra

Salt, 4 spoonfuls olive oil, 1 spoonful vinegar

 

 

Break paximadi in appropriate pieces and place them in a salad bowl. Wash the vegetables, chop them and place them over the paximadi. Add the olives, the capers and the feta cheese. Mix the oil with the vinegar and sprinkle the salad with this sauce.
