TEAM OF CRETAN PAXIMADI PRODUCERS

300 grams. dried beans

6 spoonfuls olive oil

1 onion in slices

salt, pepper

Put the beans in water to soak overnight. The following day change the water and boil the beans until soft. Make sure that there is enough juice left. In a different pot heat the olive oil and sautι the onion until it changes colour. Add the beans along with their juice, salt and pepper and boil for another 10 minutes. A little bit of lemon juice can be added. Serve in deep plates placing first the paximadi and then the beans over it.
